Château du Cèdre Cahors is a fresh and enlivening organic wine with generous flavours. Made from a blend of 95% Malbec and 5% Merlot grapes, it shows flavours of plums, cherries and blackberries and spices, with a long finish.
Pascal and Jean-Marc Verhaeghe produce excellent Malbec from these established vineyards. Drawing on his winemaking experience from California to Burgundy, Pascal delicately chisels wines of great elegance, rounding them off with judicious aging in new oak barriques. In the winery, Pascal vinifies the harvest in tanks and foudres, the wines are then matured in 225l or 500l barrels. The use of oak is carefully weighted, each vintage requires different actions, the aim is to produce Burgundy-type wines, that reflects both their terroir and their specific vintage.
