Tasting Notes
The depth of flavour in the mouth and the richness of the wine reveal a great champagne, underpinned by fine acidity yet with great concentration and refinement. The richness of the palate is evident from the marriage of preserved citrus flavours and the slightly gamey notes of some richer pinot noir base wines. The spicy grilled notes come together with the luscious flavours of yellow plum to reveal a great champagne, finely crafted, with weight but always with subtlety and balance.
The Story
The Castelnau Vintage undergoes an unusually long period of lees ageing in the cellar, often for more than 10 years, and it is this that allows the expression of the very best vintages in champagne to be revealed… This cuvee is quite a revelation! The depth of the Pinot Noir and the purity of the Chardonnay grapes chosen to combine to illustrate the surprising potential of a vintage of great natural ripeness and aromatic balance.
Food Matches
The Castelnau Vintage is ideal as an aperitif and yet the toasty, grilled notes will go just as well with a veal fillet served with girolles mushrooms.
