Description
First produced in 1985, Cervaro della Sala was one of the first Italian wines to undergo malolactic fermentation and ageing in barriques. It is a light straw colour with greenish highlights in the glass, with aromas of chamomile, white flower blossom and flint on the nose. The palate is savoury, fresh and lively with notes of vanilla, citrus and hazelnut butter. A simply delicious Mediterranean style wine with brilliant ageing potential.
Castello della Sala is located in Umbria, not far from the borders with Tuscany and Lazio, about 18 kilometres from the historic city of Orvieto. A Medieval castle sits on a plot spanning 600 hectares – 200 of which are under vine – on gently rolling hills that the region is famous for. The vines grow in clay and calcareous based soils, exposed to the sun and with a big diurnal range – perfect for growing white varieties.
